Crispy Honey Chilli Potatoes

My take on the best Indo-Chinese starter, elevating it even more with @smallbatch.co.in Roasted Ghost Chilli Honey.

    Slice potatoes.

    Blanch them in water for 7 minutes.

    Add to ice cold water immediately.

  4. 4

    Pat them dry with a cloth or tissue.

  5. 5

    Mix the dried potatoes with flour and spices.

    Drop them directly into hot oil.

  7. 7

    Fry on medium high for 4-5 minutes till golden brown and crispy.

    Heat up some oil and sauté aromatics till fragrant and golden.

    Add in the sauces and cook for 2 minutes or till thicker.

    Add the cornstarch slurry to the pan and combine.

    Add in the smoky sweet honey and let the sauce bubble.

    Add in the fried potatoes and gently coat tell with the sauce.

    Serve them hot with more Roasted Ghost Chilli Honey, fresh coriander chopped, and toasted sesame seeds.
