Thai Pad Kra Pao with Tofu

I really love the classic Thai pad kra pao, but for weeknight dinners, I prefer eating a little bit less meat.

    Drain the tofu and put it into a clean kitchen towel. Press as much liquid as possible out, until you are left with sort of dry tofu crumbles.

    Heat a pan (non stick is probably best!) with some oil and add your tofu. Let it cook undisturbed on crispy and golden on one side.

    In the meantime, mix oyster sauce, light soy and fish sauce in a small bowl.

    Add the shallots, garlic and chilis to the tofu and continue frying for 3-4 minutes.

    Add the sauce and ⅓ cup of water. Let reduce for a few minutes before adding the basil.

    Fry for another minute or two.
