Dumpling Salad in 15 Minutes
This recipe is inspired by Thai Som Tam, but only has cabbage and carrots for veg. The dressing is made with lime juice, garlic, oil and fish sauce. If fish sauce isn’t your thing, you can swap it out for soy sauce.

Finely slice the cabbage. Cut the carrots into match sticks. Add to a large bowl.

Heat a pan on medium high and add some oil. Fry the dumplings until the bottom is golden brown about 5 minutes. Add ¼ cup of water and cover with lid and cook for another couple of minutes.

While the dumplings are cooking, make your dressing. Mix all of the dressing ingredients in a small bowl.

Once all of the water has evaporated, add the dumplings to the bowl with the cabbage. Add the dressing and the crushed peanuts. Toss around and serve. Finish with extra dressing and peanuts.
