Peach Salad

Preheat oven to 200°C (400°F) with the fan on.

Drain and rinse chickpeas, then dry them on a towel. Place them onto a baking sheet and toss with a little bit of oil. Roast for about 30 minutes until crispy, shaking the pan once halfway through.

Finely mince your shallot and add all of the ingredients for the dressing into a small bowl.

Cut the peaches and tomatoes into wedges.

To serve, add quinoa to plates, and top with peaches and tomatoes. Crumble the feta over and top with crispy chickpeas and fresh mint. Spoon over the dressing and season with salt.
