Fresh Pasta with Chanterelles
Mushroom season is upon us so go get your fix!! This works great with any mushrooms, just make sure to cook them with no oil first to draw out the water and so they can crisp up in the oil. And we didnt even use a pasta machine for this so there is no excuse for you not to make some fresh pasta :)

Knead together the plain flour, eggs and yolk with 1/2 tsp of salt to form a soft dough. Allow to rest covered room temp for 30 mins

Roll out the pasta as thin as you can and then slice thinly to make tagliatelle

Heat up a pot of heavily salted boiling water

Fry the chanterelles in a hot pan with no oil until some of the water has evaporated. Add in 2 tbsp of butter and fry until starting to brown. Add the garlic and thyme and cook for 30 seconds.

Boil the pasta for 1 1/2 minutes

Add in the pasta with a ladle of pasta water. Add in the parmesan and more pasta water. Toss very well to make a glossy sauce.

Finish with the juice of 1/2 a lemon. Taste for seasoning and finish with black pepper
