Mini Puff Pastry Pizzas
A weekend aperitivo idea: mini puff pastry pizzas and a glass of @gratsiwine.

Preheat oven to 400 F. Line two baking sheets with parchment paper.

Remove puff pastry from packaging and unroll. Using a pizza cutter or sharp paring knife, cut it into squares.

Score the puff pastry squares around the edge with a paring knife. Brush the crust with egg wash. Bake for 10-15 minutes, or until puff pastry has puffed up and is just starting to brown.

Remove puff pastry from the oven and start loading on your sauce, then cheese, then toppings. Return to the oven for another 5-10 minutes, until pastry is golden brown and cheese is melted.

Add any toppings you’d like uncooked after cooking (arugula + prosciutto, for example). Serve warm.
