    Dice your chicken into bite sized pieces and chop your pepper into small chunks. Fry both in a pan until the peppers have softened and the chicken is cooked through fully.

    Add your garlic and soy sauce and then cook for a further minute.

    Add in your water (I did 50ml then added more as it cooked). Add an uncooked pouch of rice and simmer for 2-3 minutes.

    Make up your mayflower curry as recommended on the box.

    Serve your rice and top with your curry and some chopped spring onions.

I added 60g of broccoli for 20 calories extra taking the whole meal to just 487 calories.
