Wedge Salad with Shrimp, Old Bay Breadcrumbs & Hot Sauce Dressing
My lunch today was a perfect end of the summer salad. Crunchy iceberg lettuce is drizzled with a creamy hot sauce dressing, then topped with crispy Old Bay breadcrumbs and sweet, luscious shrimp. I added some cherry tomatoes from my garden and some leftover grilled corn. Bye bye summer! See you next year!

Whisk together: 1/2 cup of mayo, 2 TBSP milk, 1 tsp sherry vinegar, 5 tsp hot sauce, salt and pepper to taste.

Heat a little olive oil in a pan. Add 1 1/4 cup of fresh breadcrumbs and 1 tsp of Old Bay seasoning. Cook over medium heat stirring occasionally until golden.

Add cooked shrimp, tomatoes, corn or any other summer veggies you have on hand to the salad.
Notes
This is really kind of a loose salad. Add more or less of anything or other ingredients if you like. The dressing makes about a half a cup. It dressed 2 iceberg rounds. I would double it if you want to serve more.
