Cucumber Mango Salad
Can you believe this recipe is from a page that I ripped out of a 2008 Cooking Light magazine! I saved it in a notebook of a gazillion salad recipes I’m hoping to try one day.

Combine first 4 ingredients in a colander and toss gently to coat. Let stand 20 minutes.

Heat oil in skillet on medium high. Add tomatoes and next 8 ingredients (through cloves). Sauté a couple of minutes till tomatoes are tender. Cool to room temperature.

Combine drained cuke mix, tomato mix, mango, cilantro & lime juice. Toss to combine & enjoy!
