CUCUMBERS with AJO BLANCO SAUCE
I recently pulled 3 cukes from my garden and wanted to put them in an easy, simple salad. These sliced cukes marinate in sherry vinegar before taking their place atop a creamy, garlicky almond sauce.

Place the sliced cukes in a bowl. Add 2 tsp vinegar and a pinch of kosher salt and marinate 10 minutes. Then pour off the liquid.

Blend the garlic, oil, 2 tsp vinegar, 1/2 cup almonds and ice water till smooth and creamy. Season with salt and pepper to taste.

Spread some sauce on a plate. Top with cukes. Sprinkle with chopped almonds and sea salt and enjoy!
