Sticky Onion Tart
I am ALWAYS about the edible plate! And when I saw the recipe for this caramelized onion tart, I had to try it! This crunchy puffed pastry holds yellow onions slow cooked with some fresh sliced garlic and sweet chewy cranberries. Apple cider vinegar, brown sugar, fresh bay leaves and thyme reduce to a sticky perfection. It’s ready to be topped with your favorite greens!

Place butter, thyme and bay leaves in a 10 inch skillet and shake the pan around until butter has melted and is bubbly. Add the sugar, vinegar and 7 TBSP water.

Place onions in pan, cut side down and fill in the gaps with the garlic and diced cranberries. Season with salt and pepper. Cover, turn the heat down to low and let the onions steam 10 minutes.

Remove the lid and heat till the liquid reduces and becomes sticky. This will take about 50-60 minutes! Rotate the onions periodically with your fingers to make sure they don’t stick.

Place the puffed pastry sheet over the onions and use a wooden spoon to tuck the edges in. Lightly prick the top with a fork. Bake for about 25-30 minutes until golden and puffed.

Cool slightly before turning out onto a plate. Top with your favorite greens and enjoy!
