Spicy Vodka Chicken Sandwich

This is a crispy chicken sandwich with melted mozzarella, and dill pickles, served on a garlicy pretzel bun in a pan full of homemade spicy vodka sauce.

    Heat saucier over medium heat for 2 mins, then add olive oil. Add the onions and cook until translucent. Add the garlic and cook until fragrant. Add the tomato paste and cook for 1-2 minutes. Add vodka to deglaze, then reduce heat to medium-low. Add remaining ingredients. Simmer for 10 mins. Remove from heat.

    Preheat oil to 350°F in a skillet or deep pan. Slice chicken into cutlets, about 1/4-1/2 inch thick.

    To a plate, add flour. Combine the panko, garlic, Parmigiano Reggiano, Italian seasoning, salt, and pepper on a second plate and mix well.

    In a small bowl whisk the egg and milk. Then transfer to a third plate.

    Coat chicken in flour and dust off the excess. Dip chicken in wet mix, then coat with dry mix. Press the cutlet firmly into dry mix then shake off the excess. Carefully place chicken in the oil and cook to an internal temperature of 165°F. Remove chicken from oil, place on a wire rack, season with flaked sea salt. Add mozzarella cheese and cover with a tray or plate to allow the steam to melt the cheese.

    Add the pickles, chicken, and then brush bun with garlic butter. Cut sandwich in half.

    To a preheated skillet, add the sauce, then add the sandwich (cut side down).
