Paneer and Sweetcorn Masala
A very speedy Monday night curry to satisfy my cravings for something a little spicy

Fry the onions in the oil for 5 mins, then add the garlic and ginger and continue to cook for a few minutes.

Add all the spices, and the tomato puree. Keep this moving in the pan, being careful not to burn.

Add the water, the sweetcorn, the paneer cubes, season with salt to taste, and dinner for 5-10 minutes.

Stir in the chopped coriander, and serve.
