Bang Bang Sauce

Preheat the oven to 200 degrees Celsius (fan).

Remove the skin from the salmon fillets and cut them into bite-sized pieces.

Combine all the salmon ingredients in a bowl and mix thoroughly.

Line a baking tray with baking paper and place the salmon bites on it.

Bake the salmon in the center of the oven for 14-16 minutes.

Heat 1 tablespoon of extra virgin olive oil in a pan over high heat.

Add the chopped onion and pepper and cook for 3-4 minutes until softened.

Add the chopped garlic and cook for 30 seconds until fragrant, then stir in the tomato puree and all of the rice seasonings.

Add the rinsed and drained rice, mix well, then add the frozen peas, hot vegetable stock, mix well and cover with a lid.

Bring to a boil, reduce the heat to low, and simmer for 17-20 minutes.

In a small bowl, combine the mayonnaise, sriracha, and sweet chili sauce.

Divide the rice among three bowls and top with the salmon bites.

Drizzle the bang bang sauce on top and garnish with thinly sliced spring onion.
