Preheat the oven to 180 degrees Celsius. Line a roasting tray with baking paper and place the chicken on the tray. Drizzle the extra virgin olive oil over the chicken and sprinkle all of the chicken seasonings. Rub the seasonings all over the chicken fillets. Bake for 21-22 minutes.

Once the chicken has slightly cooled, shred it. Add the shredded chicken to a mixing bowl and pour over 150 ml of buffalo sauce (reserve 10 ml for later). Add the rest of the ingredients, except the grated cheese and mini tortillas. Mix well.

Line another roasting tray with baking paper and place the mini tortillas on the tray. Add some grated cheese to each taco, then 2-3 tbsp of the chicken mixture. Top with more grated cheese and fold up the tacos.

In a small bowl, combine 1/2 tbsp extra virgin olive oil and the 10 ml of buffalo sauce. Brush this mixture over the tacos.

Bake for approximately 15 minutes at 180 degrees Celsius, carefully flipping the tacos once so that both sides become crispy.

Serve with guacamole, if desired.
