In a large bowl, combine the ground beef, grated onion, chopped parsley, breadcrumbs, chili pesto, and all the seasonings.

Take a small portion of the mixture and roll it between your hands.

Heat the oil in the pan, add the meatballs to the pan, and fry for 6-7 minutes over medium-high heat.

Continuously turn and cook the meatballs to ensure even browning on all sides.

Remove the meatballs from the pan and set them aside.

In the same pan, add the chopped onion and cook for 2-3 minutes over high heat until softened.

Add the chopped garlic and cook for 1 minute until fragrant.

Then stir in the tomato puree, plain flour, and seasonings.

Pour in the hot vegetable stock or water, single cream, and chili pesto.

Return the meatballs to the pan and mix well.

Cover with a lid and simmer over medium heat for 3-4 minutes.

Add the baby spinach, mix, and simmer for a few more minutes until the sauce has thickened.
