Crispy Peri Peri Chicken Flatbreads

    Turn your oven to 180 degrees Celsius.

    Get a roasting tray and line it with baking paper.

    In a bowl, mix crushed cornflakes, flour, peri peri seasoning, paprika, salt, and pepper.

    In another bowl, combine oil and 4 tablespoons of Nando’s peri peri sauce.

    Dip the chicken mini fillets into the oil mixture, then coat them with the cornflake mixture.

    Place the chicken on the roasting tray and bake for about 21-22 minutes.

    Once the chicken has cooled down a bit, chop it into bite-sized pieces.

    In a small bowl, mix mayonnaise, 2 1/2 tablespoons of Nando’s peri peri sauce, and 1 teaspoon of peri peri seasoning.

    Put the flatbreads on a roasting tray, top them with the crispy chicken, sweetcorn, and some of the peri peri mayonnaise.

    Sprinkle grated cheese on each flatbread.

    Bake for about 6-7 minutes or until the cheese melts.

    Take them out of the oven and drizzle the remaining peri peri mayonnaise on top.
