Put the rice in a pot after rinsing and draining it. Add about a cup of water and bring it to a boil. Then, turn the heat down low and let it simmer until all the water is absorbed and the rice is cooked. Turn off the heat and let the rice cool down completely.

Heat half a tablespoon of any oil in a large pan. Add the chopped garlic and cook for a few seconds until it smells good. Then, add the ground beef and cook until it starts to brown. Add 1 and a half tablespoons of low-sodium soy sauce, 2 tablespoons of sweet chili sauce, and all of the beef seasonings. Mix it well and cook for another 4 minutes. Take the beef out of the pan.

In the same pan, add the other half tablespoon of oil, then add the chopped onion and pepper. Cook them over high heat for 2-3 minutes until they’re soft.

Add the cold rice and all of the rice seasonings. Then, in a small bowl, mix the soy sauce, sriracha, sweet chili sauce, and vinegar. Pour it over the rice.

Add the thinly sliced pak choi and some of the cooked ground beef (keep some aside to put on top of the rice). Cook for 3-4 minutes over medium heat.

Add half of the sliced spring onions and, if you want, the sliced red chili. Mix it well for a few seconds.

Divide the crispy beef chili fried rice into three bowls, then top with the rest of the crispy beef, sliced spring onions, and sesame seeds.
