One Pot Crack Chicken Pasta

    Add the diced bacon to a hot, large skillet. Cook for approximately 8-10 minutes until crispy. Remove from the bits from the pan, set aside on some paper towel and drain most of the bacon fat until there is 1 tablespoon left in the pan (this will be used for the onions and chicken).

    Season the cubed chicken with 2 teaspoons of salt, pepper, and paprika. Add the diced onion and chicken to the hot bacon fat, cook for 7-8 minutes until the chicken is lightly browned on the outside, stir semi-frequently. Add the ranch seasoning and cook for another minute, mixing it all up so the chicken is coated evenly.

    Add the chicken broth, bring the mixture to a boil then add the penne, cover with a lid and simmer for 15 minutes or until most of the liquid is absorbed and the pasta is al dente. Don’t overdo it here because you still want some liquid at the bottom which will help form the sauce.

    Turn the oven onto a broil in preparation for step 6.

    Add the cream cheese and mix until combined with the pasta. Top with grated cheddar cheese and mozzarella (don’t mix), broil for 2 minutes until the cheese is golden and sizzling on top. Watch the pasta carefully because it can quickly burn if left on broil for too long.

    Top the pasta with the crispy bacon bits, black pepper, and serve immediately.
