Marry Me Chicken Pasta
This Marry Me Chicken Pasta, ready in 30 minutes, is a creamy Tuscan-style pasta made with sautéed onions, red peppers, sun-dried tomatoes, and other beautiful fresh fall flavours.

Make your pasta according to the package, if you use sourdough pasta make sure to not overcook it. When done I rinse the pasta under cold water to prevent clumping and set aside.

Season the chicken thighs and allow to marinate for as long as you are willing to wait (up to 3 hours but I didn’t wait) in a large deep pan heat up 2 tablespoons of olive oil and cook for 7-8 minutes or until fully cooked through. Stir often.

In the same pan add another tablespoon of olive oil to the chicken fat and once hot, add the onions and red pepper. Cook for 7-8 minutes over medium heat. Stir occasionally.

Introduce the tomato paste, sun dried tomatoes and garlic. Cook for another 3 minutes over medium heat before adding the thyme and oregano. Cook for another minute.

Slowly add the cream then the chicken stock and bring to a simmer for several minutes.

Add the chicken back in. Cook for a minute or two.

Plate and top with fresh basil and black pepper. Enjoy!
