Gnocchi and Cheese

Preheat your oven to 400°F and position a rack in the top third.

In a large pan, heat up the olive oil over medium heat. Once it’s nice and hot, toss in those garlic slices. Let them lightly brown for about 2 minutes, just enough to release all that delicious garlicky aroma. Add the potato pillows and sear them for 3-5 minutes until they’re crisp and golden on the outside. Don’t overcook them.

Grab an oven-safe skillet (or transfer everything into one later) and melt the butter over medium heat. Once all melted, whisk in the flour. Cook for 1-2 minutes until it is no longer lumpy but do not burn it! Slowly pour in the milk, whisking continuously. Keep stirring for a couple more minutes until the sauce thickens.

Reduce the heat to low and mix in the cheddar cheese until melted. Stir in the mustard, black pepper, salt, paprika, and half of the Parmesan cheese. Add the gnocchi, gently folding them into the sauce. Sprinkle with the remaining Parmesan cheese.

Slide that skillet into the oven and bake for 10-12 minutes, until everything is bubbly and happy. Then, switch to broil for 2-4 minutes to get that beautiful golden-brown crust on top.
