Ingredients
Directions
- 1
Melt 2 tablespoons of butter in a large skillet, once hot add the cubed chicken breast pieces. Toss in a couple teaspoons of both salt & pepper onto the chicken and mix to combine. Cook the chicken for several minutes until all sides are browned but not cooked through. Remove the chicken and set aside for later.
- 2
Prepare your seasoning mixture by combining the garam masala, cumin, chili powder, and cayenne pepper.
- 3
Melt an additional 2 tablespoons of butter into the same pan, once hot add the diced onion and sauté for a few minutes until translucent. Add the minced garlic and ginger, stir in and cook for 1 minute before adding the seasoning combination. Cook for 1 more minutes to infuse the seasonings with the onions, ginger, and garlic.
- 4
Add the tomato sauce, mix and then simmer for 5 minutes. Pour in the heavy cream slowly and try to ensure it is room temperature to prevent curdling. Tip: you can speed this up by place the cream carton into a bowl of warm water.
- 5
Add the chicken back into the sauce, mix everything together and lightly simmer for 15 minutes. Add in fhe lime juice along with the final 2 tablespoons of butter.
- 6
Optionally, top with fresh cilantro and lime slices.
