Caramelized Onion & Steak Sandwich

Begin by melting a tablespoon of butter with a splash of olive oil in a skillet over medium-low heat. Add your sliced onions, stirring them into submission until they’re beautifully caramelized, about 20-30 minutes.

Season your steak heartily with salt, pepper, and optionally, your favorite seasoning salt. Preheat your oven’s broiler for later magic.

In a pan that means business (cast iron or stainless steel), get some oil smoking hot. Sear your steak to a golden perfection. Flip, then introduce butter, rosemary, thyme, and a chorus line of garlic cloves. Baste with gusto, adding butter as you channel your inner chef. Cook to your idea of perfection, then let the steak rest.

Slice your bread and lay on the provolone to the bottom slice. Broil until it’s bubbling and golden. Keep an eye out—like a soap opera, this can go from zero to burned in seconds.

Make your garlic aioli by combining 1/4 cup mayonnaise, 1 tablespoon of fresh lemon juice, 2 minced garlic cloves, and black pepper.
