Brown Butter Garlic Lemon Pasta with Herbed Chicken
Warm brown butter pasta infused with garlic, lemon & parmesan, topped off with crispy golden herb chicken thighs… sold?

Make your spaghetti. Follow the package, save some pasta water at the end… then set aside

On a low heat, melt 4 tablespoons of butter in a large pan and stir until turned to a light golden brown color. Once you can start to smell that nice nutty scent of the butter browning, add 6 sliced garlic cloves and continue to stir often for the next two to three minutes until the butter is fully browned (NOT BURNT).

While cooking on a medium-low heat, squeeze in the fresh lemon juice and stir. Add the cream and half of the lemon zest, then stir to combine. Add 3/4 cup of parmesan and once again, stir to combine. Bring the sauce to a simmer and incrementally add 1 cup of pasta water over the duration of 5 minutes while the sauce simmers.

Mix in the cooked pasta then add the remaining 1/2 tbsp of lemon zest and 1/4 cup of parmesan cheese. Top with the golden chicken thighs (see below).

Finally, this is optional but recommended, melt 2 tablespoons of butter along with 2 cloves of minced garlic and a couple tablespoons of chopped fresh parsley. Drizzle this butter mixture onto the golden chicken thighs and feel free to likewise drizzle the chickin drippings onto the pasta as well for some extra flavor.
