Moules Frites
A simpler version of the classic dish with steamed mussels, garlic butter sauce and dirty fries

Start with your fries on a baking tray. Sprinkle with the rosemary, dirty fries seasoning, a little sea salt and black pepper. Follow the instructions on the pack for cooking time and temp

Pop the butter, garlic and parsley in a small pan. Add a good pinch of sea salt flakes and gently heat to sauté the garlic for a few mins

Pop the mussels in a steaming basket and with the lid tightly in place. Steam for four or five mins, until they have all opened out (discarding any they haven’t). Divide between two plates, pour over the garlic butter and a squeeze of lemon juice and serve with the chips, bread and mayo on the side
