Cheesy Courgette One Pot Pasta
A lovely summery pasta dish using courgettes from the garden and lots of cheese!

Start by getting your pasta on, following the instructions on the packet for quantities and cooking times. Reduce the cooking down by 5 mins.

In the meantime, prep the garlic and courgettes, melt a knob of butter in a wide bottomed pan and gently sauté the garlic for a minute or so, before adding in half the courgettes. Season well and continue to cook for a another minute or so, before adding in the passata, paste and the stock. Bring to a simmer for another few mins.

Finally, add in the pasta, mix well, sprinkle over the grated cheeses, add the rest of the courgettes on top and pop in the oven to mingle and melt for about 10 mins! Finish with dobs of creamy burrata and chilli flakes on top!
