A delicious way of cooking fish, trapping all the gorgeous flavours in a tightly wrapped parchment paper bag.

Lay the base layer of garlic, shallots, tomatoes, olives, rosemary, thyme and basil in a parchment paper bag.

Place the hake on top with a squeeze of lemon and a drizzle of virgin olive oil.
