Egg and Beans on Toast
Starting off our long weekend with one of my favourite brunch combos…

Make a cold bean salsa/vinaigrette with shallots, red onion, parsley, dill, chilli flakes, lime juice and olive oil.

Fry an egg and place it on toasted wholemeal bread.

Drizzle with chilli oil to finish.
