Spaghetti alla Puttanesca

Fry the onions and red pepper in a little olive all together for a few mins to soften, then add the garlic and capers. Continue to fry for another min or so, stirring every so often so the garlic doesnโt burn.

Add the tinned cherry tomatoes and water, simmer hard for 10mins or so to reduce, then mix in the lemon and umami if using. Add the seasonings, then fold in the tuna - go easy with the stirring now so you still have some nice chunks of tuna.

Taste, adjust as you like then add the basil. Fold in your cooked spaghetti and rocket (if using) and serve with a little parmesan and seeds as you like.
