    fry the onion and garlic until soft in a little olive oil

    add the tinned tomatoes, water, cream and tomato purée. Mix together and bring to a low simmer.

    add all seasonings, the sun-dried tomatoes and shredded chicken. Stir to combine, then add the parmesan cheese.

    loosen with pasta cooking water as needed and taste and adjust seasonings as you like.

    to serve, mix through cooked pasta and add some fresh herbs (parsley, basil). More parmesan is always good too.
