add the courgettes, garlic and butter to a pan with low-heat. Sweat and cook down for 10-15mins, stirring occasionally. Then get your pasta onto cook.

add the lemon juice, zest and seasonings. Loosen with as much pasta water as you need to create your desired sauce consistency and melt in the parmesan.

add the basil and combine the sauce with the cooked pasta. Taste and adjust the seasonings as needed. Add to bowls and top with generous rips of burrata and extra parmesan as you like.
