Golden Halloumi in a Spicy Tomato Sauce
Crispy, pan-seared halloumi cheese gets nestled in a fiery tomato sauce for a cosy balance of textures and rich, warming flavours.

Slice the halloumi into thickish pieces, pop in a bowl and cover with just boiled water for 1-2 mins. Drain, pat dry and set aside.

Fry the garlic, onion and pepper for a few mins (in a little olive oil) until soft.

Add the tomatoes and water. Simmer for a few mins then add the balsamic, oregano, chilli flakes and basil. Leave on low heat to mingle whilst you cook the halloumi.

Fry the halloumi in a non-stick (!) pan in a little olive oil: couple mins on each side. Once golden, itโs done.

Taste the sauce, adjust anything as needed then pour into bowls. Top with the halloumi. Finish with more basil and (optional) a drizzle of balsamic glaze.
