    In a bowl, add green chillies, lemon, carrots, turmeric powder and salt, mix well & Transfer the mixture in strainer and leave it for 2-3 Hours

    In a pan, add mustard seeds, fennel seeds, coriander seeds, fenugreek seeds, black peppercorns, cumin seeds, carom seeds and bay leaf, roast until aromatic & set aside

    Let it cool down

    In a spice mixer, add roasted garam masala and grind all the spices

    In a separate bowl, add Vegetable mixture, hot mustard Oil, prepared grounded masala, salt, red chilli powder and nigella Seeds (kalonji), mix well and set aside

    In a jar, add prepared Achaar and cover tightly with a lid and keep it in sunlight for 2 more days

    Gajar Ka Achaar is ready to Serve
