    Roast the garlic, shallots, peppers and habaneros. Add the veg into a bowl mix with the olive oil and salt. Then place onto a greaseproof paper lined air fryer tray or basket. Air fry at 180°C for 10 minutes.

    Add the mango, lime juice, water and roast veg into a food processor/blender. Blend until smooth, it’s okay if there’s still visible bits in the sauce at this stage.

    Pass the sauce through a fine mesh strainer. Use a spoon or spatula to do this.

    Pour the strained sauce into a pot, add in the sugar, honey, salt, chicken bouillon and cornstarch slurry. Whisk continuously while bringing to the boil, then drop the heat low and simmer/reduce for 15 - 20 minutes. Stir frequently. Add extra salt to taste if needed
