    Stir fry the onions and peppers in a hot pan for 4 minutes.

    Remove the vegetables from the pan and leave to the side to cool.

    Marinate the chopped chicken thigh pieces with the whisked egg, salt, white pepper, minced garlic and cornflour.

    Add some more oil to the pan and stir fry the chicken for 10-12 minutes on a medium heat until cooked through.

    Add the stir fried peppers and onions back into the pan.

    Mix together the sweet and sour ingredients in small bowl.

    Pour sauce into the pan and simmer for 5-6 minutes, stirring frequently.

    Once cooked taste for seasoning and then serve with rice!
