Homemade Chipotle Mayo

    Add the egg, garlic mince, lime juice and maple syrup into a blender or food processor. Blend until combined for 1-2 minutes. It should turn a slightly pale colour.

    Then slowly pour in the olive oil whilst blending. Once the texture of the mayo is thick stop adding oil.

    Add 2 chipotle peppers to the mayo and blend until the texture is mostly smooth. Season with salt & pepper to taste. Store the mayo in the fridge in an airtight jar or squeezy sauce bottle. Use as a sandwich sauce or dip!
