Mix all ingredients for the sauce together and set aside.

Add oil to a medium high pan. Add shallots, carrots, and mushrooms and sprinkle with salt.

Sauté until they have developed some color.

Add the zucchini with an extra sprinkle of salt.

Deglaze the pan with wine and let reduce by at least half.

Remove veg from pan.

Add sauce to the pan and stir frequently until thickened.

Meanwhile, cook udon in microwave according to package instructions.

Reduce heat to medium low.

Add udon to pan with veg and meat. Stir to combine.

Top with cilantro, microgreens, and sliced green onions.
