High Protein, Creamy Sausage Pasta
This dish only requires 5 main ingredients and takes 20 minutes to make, I’m obsessed

Boil a pot of salted water and cook pasta as directed by the packet. Reserve 1/2 cup of pasta water.

Heat a drizzle of olive oil in a large pan over medium heat.

Remove sausages from their skins and crumble into the pan. Cook for about 5 -10 minutes, until they have cooked through and are browned.

To the same pan add tomato paste. Cook the tomato paste down till fragrant. Turn the heat to low- medium and add your Greek yoghurt or cream. Mix in.

Add fresh spinach if adding and 1/2 a cup of reserved pasta water. Stir frequently for a couple of minutes over low-medium heat, until the spinach wilts to your liking.

Add parmesan cheese and cooked pasta.

Mix everything well. Remove from heat. Season with additional parmesan cheese and Basil if you like.
Notes
I used farmers union full fat Greek yoghurt here . Alternatively light thickened cream works well
