Add all the veg to a large baking dish. Place the feta in the middle and drizzle with olive oil. Season with your herbs and bake at 220°C for 35 mins or until veggies are soft.

Meanwhile cook pasta as directed by the packet. Reserve 1 cup of pasta water.

Remove veggies from the oven and let cool for 5-10 minutes. Blitz in a high powered blender with a little bit of pasta water. Blend until smooth adding more or less pasta water as needed.

Combine cooked pasta with your veggie sauce and top with parmesan cheese. Enjoy.
