One Pot Coconut & Lime Prawn Curry
My chicken version of this went down a treat last time so thought I would remake it but switch it up with prawns instead.

Add a drizzle of olive oil and the onion to a pan. Brown off on a medium heat for a few mins.

Add in the garlic, ginger & chilli and fry for another few mins.

Add the stock pot, coconut milk, fish sauce & soy sauce then bring to a simmer.

Add in the curry paste, lime juice and the veg. Simmer on a low heat for around 10 mins.

Add in the prawns and cook for a final 5 mins until the prawns have warmed through.

Serve with some jasmine rice and top with the garnish if you are using it

Optional garnish: fresh chilli, coriander, lime
