Add a drizzle of olive oil and the shallots to a pan, then fry off on a medium heat for 5 mins.

Add in the herbs, spices, garlic & cherry tomatoes and cook for another 5 mins.

Add in the chopped tomatoes, stock pot, tomato puree, fresh chilli and a splash of water then bring to a simmer for 5 mins.

Add in the defrosted prawns, lime juice, fresh coriander and cook for a final 10 mins.

Serve with basmati rice and garnish with some fresh coriander.
