    Add the glucose and invert sugar to the heavy Cream and bring to a simmer, set aside.

    Melt the Chocolate bars and cacao butter till 40 degrees Celsius.

  3. 3

    Pour the heavy Cream mixture over the Chocolate and emulsify.
