    Cook red onion garlic in a pan

    Add in chopped cauliflower, peppers, aubergine and chickpeas

  3. 3

    Once it’s starting to soften add in a curry powder & few chopped fresh tomatoes and a few chunks tofu

  4. 4

    Stir in some spinach and cashews

  5. 5

    Followed by a portion of cooked rice

  6. 6

    Top with extra cashews and yogurt of choice
