Massage together kale with stalks taken off, mustard, garlic, Greek yogurt, Apple cider vinegar, oregano, salt, and pepper. Leave in the fridge.

Serve with Spelt sourdough croutons, smoked tofu, avocado, roasted courgette, mushrooms and cauliflower, cherry tomatoes, lettuce, and sauerkraut.
