Sunshine Saffron Orzo with Garlic and Chilli Prawns

A delicious, rich and warming dish perfect on a cold day!

    Put the saffron in a small bowl and cover with warm water, leave to steep.

    Fry diced shallot in olive oil and salt for 3 minutes and then add minced garlic. Cook out for another minute or so before adding in the orzo and stirring well.

    Deglaze the pan with white wine, let it soak up for a couple of minutes and then add the stock. Stir frequently until all of the orzo is cooked through and plump about 10-15 minutes.

    Stir in butter and Parmesan.

    Fry sliced garlic and chilli in a pan with lots of olive oil and when very hot add in your prawns. Cook for about a minute per side, remove from the heat and squeeze over lemon juice and parsley.

    Serve these on top of the orzo and enjoy!
