A simple pleasure with courgettes, spaghetti and lots of lemon, butter and parmesan
Put the pasta on to cook.
Fry sliced courgettes until caramelised, set aside on paper towel.
In the same pan, fry diced shallots for 3-5 minutes, then add minced garlic and fry for another minute before pouring in the wine.
Let it bubble for a moment and then add in drained pasta (save pasta water!).
Add back in courgettes, grated Parmesan and butter, mix well and add pasta water to loosen.
Add more butter and parmesan to make a nice silky sauce and then stir through lemon juice.
Serve with lemon zest and lots of black pepper.
