Roasted Tomatoes with Lemony Whipped Feta

    Turn the oven to 180 degrees c fan. Add the tomatoes to an ovenproof dish, drizzle with a little oil and season if you wish. Once the oven is up to temperature, roast the tomatoes for 15 minutes.

    During which time, combine the feta, tahini, lemon and honey plus a small splash of cold water (to help blend) and blitz the mixture until smooth.

    Finally, spoon the feta dip onto a plate then place the sizzling tomatoes on top.

    Optional: dress the plate with a little olive oil, black pepper and some fresh herbs if you fancy/or don’t - it’s delicious either way.
