Pumpkin Cream Cheese Muffin

Preheat oven to 425°F and line one muffin cup with a cupcake liner.

Combine dry ingredients for the batter and stir until evenly mixed.

Whisk together wet ingredients for the batter until smooth.

Gradually fold dry ingredients into the wet mixture, using a spatula to mix just until no dry flour remains.

Prepare the cream cheese filling by mixing cream cheese, sugar, and vanilla extract until creamy and smooth.

Fill the cupcake liner with muffin batter, insert the tip of a piping bag into the center of the batter, and gently squeeze in the cream cheese filling while pulling upward. Sprinkle with pumpkin spice sugar.
