Sausage and Mash with Onion Gravy
Autumn cosy meals are my absolute fav! I love this time of year so much

Peel & Chop your potatoes and pop into a pan of salted water and bring to the boil.

Whilst the potatoes are cooking, add some low calorie oil to a pan and bring to a medium heat, add the Sausages and fry until cooked through. Turning occasionally.

Once the Sausages are cooked, remove from the pan and set to one side. Add 25g Light Butter to the same pan and let melt, Cut the Onion into slices and add to the melted butter and fry (string frequently) until the onions have softened

Add the Flour and stir for 1 minute until the onions are coated.

Slowly add the Beef Stock, Stirring all the time. Add the Mustard, Thyme & Worcestershire sauce, Salt and Pepper and simmer for 10 minutes until Thickened.

Once the Potatoes have cooked, mash with the Milk & Butter and a pinch of Pepper and then serve with the sausages, gravy & veg.
