Impress Your Guest Silky Mash Potato
A recipe for silky smooth mash potatoes, adapted from Joël Robuchon's famous mash potatoes.

Potatoes into a pot large enough to fit them, covered with cold water. Plenty of salt.

On to a rolling boil, cook until you can insert a knife cleanly with little to no resistance, about 20-25 minutes. Drain out water.

Whilst hot, scrape off the peel with a knife.

Mash potatoes in a bowl with a masher or a fork.

Get the sieve out the back of your kitchen cupboard. Use a pastry scraper, or a spoon to push the mash potato through into a pot.

Bring your milk to a boil on the stove in a pot, and immediately turn the heat off.

Place pot of potato on low heat, and stir to evaporate excess moisture, 3-4 minutes.

Little by little, fold in your cold butter on low heat until it’s all absorbed.

Add is warm milk little by little until fully absorbed and as loose as you like. Add more milk if you want to go thinner.

Taste, stir in salt and pepper until til seasoned to your liking.
